LOL – My mom grew up in the Philippines and she tells me that she and her nine brothers and sisters would eat SPAM sandwiches. My husband (who is not of Filipino descent and therefore just tolerates SPAM as a quasi-meat thing).
The family had a storefront attached to the house and you could buy SPAM and a nickel’s worth of rice to eat with it. I would guess that the love affair with SPAM started as an enthusiasm for all things American (to paraphrase Bernstein, “we are so easily assimilated…”) but really, the stuff doesn’t spoil or fall apart.
Since I was raised on SPAM, I like it quite a bit, esp. with rice. I’ll have to try the recipe. Thanks!
